Jicama salad

Jicama salad




  • Serves 4
  • 3 oz. of Queso Cotija or Verolé Queso Fresco
  • 1 medium jicama
  • 2 tbsp. lime juice
  • 1 tbsp. cilantro, chopped
  • 1 tbsp. scallion, chopped
  • 1 tbsp. extra virgin olive oil
  • 1 tsp. sea salt
  • 1 orange, purple or a regular orange
  • 4 tbsp. pomegranate seeds


For the vinaigrette: In a small bowl, combine lime juice, cilantro, scallion, olive oil and salt with a wisk until completely mixed. Set aside.

Peel and cut the jicama into ½ -inch cubes and place in a medium bowl. Pour on the vinaigrette, mix and let stand for 15 minutes. Peel the orange making sure to remove all the white skin. Cut in slices and add it to the jicama. Add the pomegranate seeds, crumbled Cotija cheese; mix well and serve.
